Homemade Granola

Yesterday I had a brunch with my lovely ladies. It’s not the first time we do this and this time it was at Mona’s place! We always agree in advance who takes what to eat (and yes, we always have way too much food). I decided to make some homemade granola. It’s super easy and oh so good (also semi-healthy). You don’t need much: different kind of nuts, oatmeal, maple syrup, vanilla extract, coconut oil and cinnamon.

You can choose which nuts you would like to use. I always go for a mixture of pecans, almonds and unsalted pistachio nuts. You need a total of 120 gram of nuts, which you then have to chop finely.

These nuts should then be mixed in a large bowl with 200 gram of oatmeal flakes.

After that you need to add 7 tablespoons of maple syrup. This ensures that the mixture sticks to eachother.

With this mixture you only need to add 4 tablespoons of melted coconut oil, 1 tablespoon of vanilla extract and 1 teaspoon of cinnamon (I add more cinnamon because I like the taste of it).

If everything is well mixed together, you have to press this mixture flat on a baking sheet or baking paper. Afterwards you only have to slide it into the oven (150 degrees) and wait 25 to 30 minutes. Make sure that the mixture does not burn!

Allow the granola to cool down before putting it in an airtight container.

Serve the granola with some yogurt and red fruits, Mmm so good!
